Eat | Breakfast Tacos.

I’ve been sick & depressed for the last couple of weeks. Both caused me to burn out, i’ve been taking as many days off as I can to control and treat my mental health. I was home really sick (coughing, trouble breathing, & congestion.) thank goodness it hasn’t stopped me from eating. I suddenly had a craving for breakfast tacos.

Energy was low, but after days in bed I was ready for something other than toast. First I had to order eggs…. Because I was out. Thankfully everything else I needed was already in the kitchen.

Things you’ll need

Flour Tortillas (I used 2)

Sausage (I used 2 Pattie’s)

Eggs

Cheese (I used shredded cheddar)

Potato (1)

Hot Sauce (optional)

I cut the potato into squares, seasoned with onion powder, garlic salt, red pepper flakes & mushroom powder. Then tossed then in the air fryer with avocado oil. I put the Pattie’s in a iron skillet with oil and diced them up, letting them cook until crispy. The eggs I mixed with the same seasonings and added cheese using the oil from the sausage to scramble them up. (I added more cheese and let it melt once I turned the fire off)

Toast your tortillas.

Sprinkled them with hot sauce and had it with a cup of coffee in bed. They were delicious!
